Wheat, rye, barley and triticale have gluten. While we find these ingredients mostly in cereals, gluten is also used in food stabilizers, flavor enhancers and thickening agents. A gluten free diet is often recommended for people who suffer from wheat allergy, migraines, celiac disease, dermatitis herpetiformis, and non-coeliac gluten intolerance. Some clinical studies have also shown that gluten free diets help lessen autistic behaviors. However, the sample size conducted for these studies is very small.

Nearly all available medication nowadays contain gluten and so those with gluten sensitivity must consult doctors about this issue before taking any medication.

Following gluten free diets may bring about some health and nutrient deficiencies since they do not come fortified or enriched and are especially lacking iron, folates and fiber. Studies have shown that people on gluten free diets suffer from parasites and Helicobacter Pylori infections. Some cases of anemia have also been reported due to gluten free diets. Consultation with a qualified medical practitioner is advised when planning to go on a gluten free diet.
